Breakfast

The most important meal of the day!

Eggs and turkey sausage

  1. Cut the sausages and add them to the heated pan. 
  2. While the sausages are in the pan, whisk the egg (s) in a bowl,
  3.  Then scramble them into the pan with the sausages, season with salt and pepper. Cook to your liking!

Eggs and tortillas

  1. Cut the tortilla (s) and add them to a heated pan with oil. 
  2. Whisk egg (s) in a bowl, and when the tortilla is crispy or soft, 
  3. Add the egg and season with salt and pepper. Cook to your liking!

Egg Sandwich

  1. First, toast your wheat bread with butter in a hot pan, 
  2. While in your other pan, add whisked egg (s) and make into a flat patty (do not scramble). 
  3. When the egg is cooked, in the same pan, add a little more oil and add two pieces of ham. 
  4. While the ham is cooking, take the bread out of the pan and add cheddar cheese to either the bread or the egg patty to melt.

Yogurt with fruit and granola

  1. Use any sugar-free yogurt, such as Oikos or Great Value yogurt. 
  2. In a mason jar, bowl, or cup add the yogurt, with the fruit of your choice (in the correct portion), 
  3. then add 1/4 cup of sugar-free granola.

Banana Pancakes

  1. In a bowl, whisk 1 egg with a bit of vanilla and cinnamon, then with a fork, 
  2. smash 1/2 of a banana into the egg until it is all combined,
  3.  then combine 1/2 of whole oats or 1/3 cup of shredded oats. 
  4. Next, heat a pan and add 1 Tbs of oil, make small or big pancakes based on your preference.

Strawberry overnight oats

  1. Whisk together yogurt, milk, honey, vanilla extract, and nut butter, or sunflower butter ( nut-free alternative)
  2. Add rolled oats and diced strawberries to the yogurt mix, stir until combined
  3. Add to a mason jar or a bowl, then cover and refrigerate for 4 hours or overnight 

Mango coconut overnight oats

  1. In a bowl, mix rolled oats, coconut milk, and honey, then cover and refrigerate over night
  2. Next morning, mix in the 3 Tbl of mango puree and berries.


Lunch

Lunches that can be eaten at home or at school !

Muffin tin lasagnas

  1. Preheat oven to 375 degrees
  2. In a bowl, mix egg, ricotta cheese, and 1 1/4 cups Italian cheese blend
  3. Grease 12 muffin cups with oil: line each with a wonton wrapper
  4. Fill each with 1 Tbl ricotta mix and 1-1/2 Tbl pasta sauce
  5. Top each with a second wrapper, rotating corners and pressing down centers
  6. Repeat ricotta and sauce layer, Sprinkle with remaining cheese blend
  7. Bake until cheese is melted 20-25 min if desired sprinkle with parsleu

elbow soup with

  1. Cook pasta, drain, and cool down
  2. Cook half a pound of ground meat, and season with salt, garlic salt, and pepper
  3. Once the meat is cooked, 
  4. Add one small can of tomato sauce to another pan or in the same pan as the meat, but to the side, to cook the sauce, heat up and mix, aprox. 5 min
  5. Then add the pasta to the meat and sauce mix, season with 1/2 tbl of oregano
  6. Enjoy!

Pasta Salad

  1. Cook rotini pasta and cool it
  2. Add 1 cup of diced cucumbers, 1 cup cherry tomatoes quartered, 1/2 red onion diced, 4.5 oz salami chopped, 4 oz provolone cheese cubed to a bowl 
  3. Combine 16oz Olive Garden Italian dressing (light)

  1. Preheat oven to 425 F. Roll pizza dough out on a floured surface into a large rectangle. Brush crust evenly with melted butter. Using a pizza cutter, cut the dough in half lengthwise. Cut each half into 12 strips
  2. Roll each small turkey sausage in one prepared dough strip. Arrange in a  sheet pan sprayed with no-stick cooking spray. Brush sausage with butter egg wash mixture. Sprinkle evenly with kosher salt.
  3. Bake 15 -20 until golden brown

Grilled Cheese

  1. Butter 1 pieces of wheat bread on one side and place butter side down in a hot skillet.
  2. Top with cheese, then place another slice of bread on top (butter side up)
  3. Cook until the bottom slice is lightly browned, then flip
  4. Continue until the cheese is melted


Dinner

Something light for their tummies!

Small pizzas

  1. Pre-heat oven to 425 F
  2. In a Pan Pita spread tomato sauce
  3. Then add mozzarella cheese on top of the sauce
  4. Then put 5-6 turkey pepperonis on top
  5.  Bake until mozzarella cheese and pepperonis are cooked or golden brown, with a pizza cutter or knife cut into 4s

Quesadilla

Using 1 oat flour tortilla or 2 tortiregias, add them to a heated pan with oil, and on the side faced up, add mozzarella cheese, queso fresco, or Oaxaca cheese

Yogurt with apple

5.3 oz of Greek yogurt or sugar-free, fat-free yogurt and add 1 apple (diced) to it, topped with a bit of honey

Turkey sandwich

2 slices of wheat bread with 2 pieces of turkey ham with 1 Tbl of mayo with lettuce and tomato, cheese of your choice

Chia pudding

In a bowl or mason jar, mix 2 tbsp chia seeds with 1/2 cup of oat milk or almond milk, 1/2 cup of plain or vanilla Greek yogurt (sugar-free), 1 tbsp of honey, and a splash of vanilla extract.
